According to scientific findings, cocoa, or Theobroma Cocoa in Greek, contains up to 1,200 chemical components. These include magnesium, iron, zinc, vitamin C, and serotonin . Cocoa is a superfood that acts as a natural antidepressant and aphrodisiac , among other things. The dopamine and serotonin activated by cocoa promote a sense of well-being and have a mood-enhancing effect. Regular consumption of cocoa can also rejuvenate the skin.

There are three main categories into which fine cocoa is divided: Criollo, Forastero and Trinitario.

Criollo is the most ancient form of the cacao tree. These dominated the market until the 18th century. But today, pure Criollo fine-flavored cacao is almost nonexistent. Criollo yields only 0.001% of total cacao production.

Forastero is a consumer cocoa. It is found in most of the chocolate we find in supermarkets. It accounts for 80% of global production.

Trinitario is a hybrid of Criollo and Forastero.
